Most of that is for sending the head away for testing for warpage.
Can be shaved if not so bad.
If all perfect can get all seals and head studs from the stealer and do it yourself for under 500.

Can't be shaved. The tolarances are to close. What they have to do is place the head into a oven on a flat piece of slab. This will cause the head under high heat to straighten it's self out.
If you have never done it correctly don't attempt it. You require special tools to realign the cams. The procedures for tightning the chain must be followed, if not you will destroy your valves and pistons on the first startup.

One of my friends with a 325, had the head shaved to gain compression ratio. In theory will increase horse power. But I can't feel it (maybe I am used to my M3) and the throttle response is not as good as in my M3.
