Avoid the 4.10, it's too short for any kind of driving outside the city. I have a 3.73 myself, i'd say it's pretty much perfect for a m20. Good pickup at lower speeds, and since the engine is at around 3500 at 120 kph, you get decent acceleration at that speed too.

2.93 would be the stock ratio in your car.

There's a tab on one of the backing plate bolts but I think some have it etched in the outside

I'm looking for a 2.93 LSD. I'd trade my 3.25 LSD if that works for your swap.

What do you want to do with the car? I had a 4.10 in my daily driver / track car and loved it. But if you consider 3500RPM too high for the highway then the 4.10 is not for you.

4.10 is also fun for driving around the city, and the gearing is quite nice for cayuga.
