A stage 1 polish is polishing the car with a finishing polish which brings the deep shine out of the paint like if the car was just pained. Any deep or pronounced swirls and marks caused by road debris or improper washing washing may not go away because the finishing polish is not cutting and that's when you would need a stage 3 polish. attached below is a car that had a stage 3 polish done to it.
Regarding the paint thickness, on average a car can get 3 safe stage 3 polishes without worrying about going through the clear coat.
The average gauge reads from the top of the clear coat to the metal. Therefore gauge is miss leading unless you know how much paint each manufacture has used for each layer. The average car has a layer of primer, paint and clear coat.
The best thing I recommend is if your worried about the thickness of your paint I would not venture into polishing your car yourself and then second since we are mobile we could come out and do a free consultation to see what your car needs done to it.
