No offence OP, but it seems like you don't really know what you want. Perhaps you know you want "a bmw", but there's so much more knowledge waiting for you. Maybe take a few months to read through the forums here in the e30 and e36 sections, or on bimmerforums.com (american, huge site, much more info).

I bought my first car as a 325i 1992 e36. I was such a noob I didn't even notice it had a rebuilt title.

if you get a good example well sorted e30/e36 you're gonna love it for a first car. I bought my touring as my first car (purchase) and let emotion get in the way of a logical, well informed purchase. I had no idea what I was getting into. Almost 8k later and countless hours of labour/shop labour, and 4 years of maxing out my 4 free tows a year I still love it but **** me 8k is a lot of money. You don't want that shit.
My advice is wait for a mint car that is enthusiast owned so you don't have problems and end up hating your car.

As far as buying a 318 over a 325, if you're an aggressive driver you can get into trouble with a suzuki sprint. I don't buy that a tiny bit of engine displacement will be the difference in getting in trouble and being safe. Come out to the meets this year if you haven't bought one yet and go for a ride in both cars and see for yourself.

My race car is a 325i, my recently purchased mint 325i is my DD (may be for sale for the right offer), I also have a nice 4Runner V8... which I don"t drive much, E30 is more fun... yet I miss my 1991 318is, I would trade it for my E30 if I found one in very good shape in a heart beat.
I may open a new can of worms here but, I remember reading somewhere that M42 is the most reliable engine BMW has ever built and that came straight from the horse's mouth, I think it was an interview with some BMW engineer in Bimmer magazine some years ago.

Not quite... unless you're buying spark plugs. Really there's no difference in price for any parts, whatsoever. If you're not handy with a wrech, the timing belt/waterpump job on an M20 car will cost you waaaaay more than a waterpump job on a 318is, but that's about the only real economical advantage a 318is would give you. Gas mileage you say? Pfft. Six of one, half dozen of the other.

a girl probably wont care if it's an e30 or e36. Just whichever one is cleaner ex: burger wrappers and coffee stains everywhere. E30 is a far better looker in my opinion. E30 318 or 325: Whichever one you come across first that isn't rotted out. Insurance wont be too big of a difference in price anyway. And when you get used to the power of the 4 banger you can always swap it for an s50.

Get the 318i, as said, its good on insurance, cheaper on fuel etc etc. For juice out of the nice m42, get a decent cold air kit and chip it! Your laughing

The amount of hot chicks at Volkswagen meets are staggering. I think you really want a Mark 3 golf with a VR6 on RS's. Guarenteed panty dropper.

I mean there are hot chicks at BMW meets, but they're usually smart and know how much your BMW is worth so you won't be impressing any of them.
