What kinda engine swap would make sense....

On a 1989 525..... Just toying with an idea of a semi cheap paint job and something interesting under the hood.. How hard would a m70b50 swap be?

s50/2 is a pretty easy swap

m62 + 6spd would be baller, but i'm assuming more complex and more $$

Yeah it'd be more work and $ but it's be kind of like putting an S52 into an e36 318. Yeah you need more stuff but all of it exists OEM - you're just recreating a 540i6. The only real challenge would be the manual trans related work (pedal box, cluster changes - this one I know has a gotcha but it's all known).
