here is the cooking competition in china. They have to have the fish still moving to win..

I had sushi before .. id try it

if you see how its done it has to be dead .. i believe its just nerves moving .. kinda like a spider when it gets killed and moves its legs

wouldn;t eat the squiggly fish, but lobsters are always boiled alive and placed in the water head first to kill them "quickly" and then they don't tense up making the meat tough. Put them in tail first and you'll get tougher meat...... FYI
