How big could I go on an X5, the 3.0L not the 4.4?

um...pardon my ignorance shouldn't it be the same (biggest wheel wise) considering the fenders and stuff are the same approx size

All the same. You can fit any rim made for any of the X5's, including the 4.6 or 4.8L.

4.6 and 4.8 have fender extensions if I'm not mistaken.
Upgrade wise, 21" and 22" are the only sizes I've seen that really fill out the fenders, from the side anyways. BBS makes a sweet 21".

I've got 285/19s on a 3.0 with the standard fender trim. The wheels don't stick out.
