Ones that aren't optimized. A car on 3 wheels is not using its full grip potential.

I am running Bilstien PSS, SPC rear arms and camber plates and had Falken RT615 on my 318is and I can get it on three wheels around most corners at TMP. Other then that car was stock.

Curious to hear your opinion on a remedy to fix that. Stiffer rear springs or softer front bar?

Usually it's a result of insufficient rear roll stiffness. I would cure it with stiffer rear springs. Softening the front bar on a BMW does not work well (too much roll, less camber, bad understeer). Stiffening the rear bar will help, but then you'll likely have issues with corner exit. For us (and many other BMW race cars), the solution is considerably stiffer rear springs, stiff front bar, and soft (or none) rear bar.

So did the idea for stretching originate in drifting? To eliminate sidewall flex?
That seems like the only "real" reason for doing it, besides the cosmetic appeal.

^I think it started in europe where theres a law saying that your tires can't be sticking out of the fenders, for safety reasons. People then started to stretch tires so they can run wider wheels and still be legal.
not sure if this is true though
