Deleting the power steering has no real benefit. Where you "gain" you directly lose the convenience.
I look at it this way, if you need to delete your power steering, you do it for 2 reasons which have simple solutions.
1. Your p/s system is broken and you can't afford to fix it or are too lazy. Solution: sell your car, you shouldn't have one.
2. You want to decrease your hp loss from parasitic drag. Solution: you're engine is as a powerful as a lawn mower and you should probably be looking at a swap or power adder. The hp loss is negligible from power steering.
